I've been baking for 40 years and have used all sorts of pans. I use Fat Daddio's Madeleine pan and have had good success with that one. My latest experiment went like this; My standard muffin recipe baked in my convection oven. Divided up batter between Fat Daddio's Jumbo muffin tin and Wilton pan--greased, no paper liners. Fat Daddio's muffins were much darker & consequently drier than Wilton pan. The had a tendency to stick in some areas whereas Wilton's muffins rolled right out. Perhaps I could try again and lower the oven temperature? I think I'll just stick with what works.
